Ingredients

  • 1 large egg
  • 1/4 cup feta cheese crumbled
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon olive oil
  • 1 slice whole grain bread toasted
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a non-stick skillet over medium heat and add the crumbled feta cheese, forming a circle with an empty center for the egg.

  • Once the feta begins to sizzle and brown, gently crack the egg into the center of the feta circle, being careful not to break the yolk.
