Ham and Spinach Quiche

In college, my girlfriends and I would plan summer trips right at the end of July before school started back up in August. One of our favorite trips was the summer we spent on the chilly coast of Monterey. Even now, when I remember that foggy, dreamy getaway, I think of the cozy breakfast we enjoyed every morning at a rickety little dining table at our beach house—a freshly baked quiche. 

I don’t know how to explain it, but quiches just give this comforting “Nancy Meyers movie” feeling to breakfast. I’ve always loved a good quiche, and this Ham and Spinach Quiche recipe is no exception. It’s packed with complementary flavors like sweet ham pieces, hearty spinach, sharp cheddar cheese, onion and garlic. Drizzle a little hot sauce over a slice, and your day is off to a bright start. 

Is Ham and Spinach Quiche Healthy?

Ham and Spinach Quiche is a balanced breakfast choice due to the large amount of protein, light ingredients, and the star superfood, spinach! This leafy green is an excellent source of fiber, iron, calcium, and vitamins—I think Popeye was onto something. This Ham and Spinach Quiche is also a great gluten-free choice if you opt for a gluten-free pie crust.

What Is Quiche?

Quiche is a savory French tart typically composed of eggs, cheese, and other fillings like meat and veggies. It’s like an omelet if it were a pastry! You’ll often find it served at large parties, holidays, brunches, or, if you’re like me, for breakfast!

INGREDIENTS

  • 6 large eggs
  • 1/4 cup half and half
  • 1/2 tablespoon hot sauce
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste
  • 1/2 tablespoon avocado oil
  • 1 cup cooked ham, diced
  • 1/2 cup yellow onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 cups fresh baby spinach, chopped
  • 1 9-inch pie crust, unbaked
  • 1/2 cup white sharp cheddar cheese, shredded

INSTRUCTIONS

Preheat

Get your oven hot and ready at 400 degrees F.

Mix

Beat eggs with cream, hot sauce, and seasonings, then set aside for later.

Brown

Sizzle the ham in oil until it’s nicely browned for added flavor.

Sauté

Cook the onion and garlic until soft and fragrant.

Wilt

Toss in the spinach just until it wilts, keeping its vibrant color.

Assemble

Layer the ham, veggies, and cheese into the crust.

Bake

Cover with the egg mix and bake until golden perfection is achieved.

Serve

Cool slightly and slice

How to Make Ahead and Store?

Quiche makes a great “freezer meal.” You can bake your quiche ahead of time, let it cool, and then freeze it in an airtight container until you’re ready to rebake it.

How To Avoid Burning?

You’ll know your quiche is done when the edges are crisp, but the center still jiggles a bit. Don’t overcook it, or you’ll risk burning or crumbling your dish. You can also prevent burning by chilling your pie crust before baking it.

Can I make This Quiche Without Pie Crust?

You can make your quiche with no crust if you desire. Just grease the heck out of your pie pan before adding your egg filling, then bake as normal.

What’s fun about quiche is that it’s totally customizable. If you’re not keen on the suggested ingredients, you can try bell peppers, tomatoes, sausage, chicken, and so many different cheeses in your quiche instead!


Personally, I love eating this quiche with a full spread of breakfast options like Breakfast Potatoes, fresh fruit, and Banana Pancakes. Whatever you choose, I think you’ll agree that delicious dish is great way to start your day!

Ingredients

  • 6 large eggs
  • 1/4 cup half and half
  • 1/2 tablespoon hot sauce
  • 1/4 cup green onions sliced
  • Salt and pepper to taste
  • 1/2 tablespoon avocado oil
  • 1 cup cooked ham diced
  • 1/2 cup yellow onion diced
  • 2 cloves garlic minced
  • 1 1/2 cups fresh baby spinach chopped
  • 1 9- inch pie crust unbaked
  • 1/2 cup white sharp cheddar cheese shredded

Instructions

  • Preheat your oven to 400 degrees F.
  • In a large mixing bowl, whisk together eggs, half and half, hot sauce, green onions, salt, and pepper until well combined. Set aside.

  • Heat avocado oil in a large skillet over medium-high heat. Add diced ham and cook for 2-3 minutes until slightly browned.
  • To the skillet, add diced yellow onion and minced garlic, sautéing for 3-5 minutes until the onion is translucent.
  • Stir in the chopped baby spinach and cook for about 1 minute until wilted, then remove the skillet from heat.

  • Transfer the ham and spinach mixture into the pie crust, and sprinkle the shredded sharp cheddar cheese on top.
