These homemade Protein peanut butter cups are made with protein powder and coconut oil. An easy, healthy snack that is gluten free and good for you!

You guys. Today, I am tired.

And not tired as in just-give-me-a-5-second-cat-nap-and-I’ll-be-golden kinda tired. Tired as in, let me sleep-for-the-rest-of-my-life-because-bears-get-to-sleep-for-half-their-lives-and-I-am-a-human-so-I-should-have-more-privileges-than-a-bear-so-my-whole-life-is-permissible kinda tired.

You get it.

You know why I’m tired? I’ll give you ONE GUESS.

Yep, if you’ve been here long enough, you probably guessed that Mr. FFF was up to his usual antics again.

So, last night we went to bed. I was tired (which is why people go to bed RIGHT?) but, clearly, Mr. FFF? He was not so much.

Just as my eyes were about to shut and I was about to end LA LA land, I hear “CAN YOU FEEL THE LOVE TONIGHT, IT IS WHERE WE ARE”

Yes, an impromptu “Lion King” serenade happened in Chez FFF.

There was even snapping and arm flailing. I think it was supposed to be dancing but, really, no matter how hard you try you can’t dance normally whilst laying down.

Car dancing though, is a favorite of mine. But, that’s neither here nor there.

After he finished his song I proceeded to ask “So, are you done?” And he replied “Are you impressed?”

“No. I want to sleep.”

“SHOT THROUGH THE HEART AND YOU’RE TO BLAME! YOU GIVE LOVE A BAD NAME!”

So, how are you today? I hope that you got enough sleep to make up for my lack of it.

Now, I must tell you that there was a silver lining to my own personal night on Broadway.

I woke up to these healthy peanut butter cups in my freezer, ready to be devoured. I didn’t have to even THINK about mixing some oatmeal recipe up and having to do the awful, laborious task of putting it in the microwave for the PERFECT amount of time, so that it isn’t runny but it isn’t a solid hockey puck.

You know, first world problems.

Side note: Why is it that the recipes you think are going to be the easiest to develop are the HARDEST? I had to make these protein cups eleventy billion times to get them perfecto. It was the same thing with the keto chocolate peanut butter fat bombs.

Which, was kind a good thing. Taste testing was notsohard.

How to make peanut butter cups

Making peanut butter cups at home is probably the easiest thing ever. ALMOST easier than buying them at the store.

  1. 1.Melt your chocolate and coconut oil in the microwave. Mix in the protein powder
  2. Pour the chocolate just under 1/3 of the way into 12 mini muffin cavities and freeze until set, about 10-15 minutes.
  3. Stir together the peanut butter and protein powder and roll into 1 tsp sized balls.
  4. Place one ball in the center of each cup, pressing it out. Fill the top with the melted chocolate
  5. Refrigerate until set and EAT!

What kind of protein powder to use to make protein peanut butter cups?

You can use any protein powder you like here! I used plant based protein for Mr. FFF, but you could use whey too!

I meannnn, healthy chocolate peanut butter protein cups that are basically equivalent to a homemade protein bar because they are PROTEIN packed, BUT it has only-a-few-ingredients-but-I-can’t-remember-exactly-how-many-because-my-brain-says-zzzzz? I also revert to a 3 year old who has no manners or sense of the English language when I’m tired.

Protein Peanut Butter Cups

Serves: 12 Cups
Prep: 20 minutes minutes
Total: 1 hour hour 20 minutes minutes

Ingredients

  • 1 Cups Semi sweet dairy-free chocolate chips
  • 1 Tbsp Coconut oil
  • 3 Tbsp Natural creamy peanut butter (the no stir kind)
  • 3 Tbsp Vanilla protein powder, of choice

Instructions

  • Line a mini muffin pan with 12 mini muffin liners.
  • Place the chocolate and coconut oil in a microwave safe measuring cup and microwave on half power for 30 second intervals until smooth and melted.
  • Once melted, pour a THIN layer of the chocolate on the bottom of each cup. Place into the freezer for 5-10 minutes to harden.
  • While they harden, mix together the peanut butter and vanilla protein powder. It might be easiest to use your hands! Roll them into 12 1 tsp sized balls.
  • Once chilled, put one peanut butter ball in each cup and press out flat, leaving a little rim around the edges where you can see the chocolate underneath.
  • Fill the cups with the rest of the remaining chocolate.
  • Cover and place in the fridge for about 30 mins-1 hour to harden. **
  • DEVOUR!

Tips & Notes:

**right out of the fridge these will be a little hard, so let them sit at room temp for a few minutes before eating
