- Pecans
- Baby Spinach
- Strawberries
- Cooked Chicken Breast
- Red Onion

How to make a Strawberry Chicken Salad
To make yourself a strawberry salad, you’ll need some colorful and delicious whole foods and a few minutes- that’s it! Here’s how to make this salad:
Make the Vinaigrette
Head on over to the vinaigrette recipe and blend it up. The recipe should yield about one cup of salad dressing for your chicken and strawberry salad.
Toast
Spread the pecans onto a large cookie sheet. In an oven preheated to 400 degrees Fahrenheit, place the pan in the center and toast the nuts until they are lightly toasted and your kitchen smells nutty and delicious!
Assemble
Divide the greens amongst 6 salad bowls. Top the spinach with the chopped strawberries, cubed chicken breast, sliced onions, goat cheese and diced avocado. Sprinkle with salt, to taste.

Recipe Substitutions
Like so many of my recipes, this strawberry chicken salad can be mixed up and altered to suit your dietary needs and/or preferences. Instead of strawberries, you can use raspberries both in the dressing AND the salad itself if you prefer their flavor. You could even use blueberries or blackberries if they are your jam! If you don’t have lime juice or simply want to try something else instead, consider using a balsamic vinaigrette instead.
Can I use a different leafy green?
In all honesty, I found spinach to be the best leafy green for this salad, but other greens should work well too. If you have mixed greens, green leaf lettuce or arugula on hand, give it a try and let me know how your salads turn out!

- 1 Batch Strawberry Lime Dressing (click for recipe)
- 3/4 Cup Pecans
- 18 Cups Baby spinach (3 cups per each salad)
- 4 Cups Strawberries, thinly sliced
- 3 Cups Cooked chicken breast, cubed
- 1 Cup Red onion, thinly sliced
- 3/4 Cup Goat cheese
- 2 Avocados, diced
- Pinch of salt
Instructions
- Make the vinaigrette according to the recipe -it should make about 1 cup.
- Toast the pecans in a 400 degree oven until golden and toasted smelling – about 5-7 minutes. Watch them closed so they don't burn.
- Divide the spinach between 6 bowls, followed by the strawberries, chicken, onion, cheese and diced avocado. Sprinkle with a pinch of salt.
- Divide the dressing between each bowl (about 2.5 tbsp per salad)
- DEVOUR!
