It seems one of the hardest parts about cooking eggs for a group is that nobody can eat at the same time. Well, not anymore! I just hosted my ENTIRE family for Christmas weekend and normally feel like a short-order cook. But, making eggs in the oven not only got everyone’s breakfast done at once so we could eat together, but left only one pan for me to wash after cooking! 

These eggs can also be stored in an airtight container for up to five days. As a mom, getting everyone fed and out the door in the morning is SO stressful. You can reheat these guys in the microwave and send your family off knowing they had a healthy breakfast. What I love about this recipe is you can adjust the cooking time to match how you like your eggs. Over medium? A little runny for dipping? Also, it is a perfect main star item that can be paired with veggies or bacon to make it a meal. Since the oven will be hot try it with Healthy Paleo Sweet Potato Breakfast Hash or Breakfast Cookies with Banana and Pomegranate to make a sweet/savory meal to impress!

Are Fried Eggs Healthy?

With eggs being the usual go-to for protein, this recipe is not only super easy, but Paleo, Whole 30, and Keto-friendly! Eggs also are crazy nutritious. They contain Vitamins A, B2 (riboflavin), B5, B12, folate, and selenium. Oh and ZERO CARBS! Even though this recipe calls for butter, you will be using a lot less butter with this method as opposed to frying a dozen eggs on the stovetop.

Eggs.. in the oven??

So, you’re thinking, how have I made it 25 years (wink, wink) and never heard of making eggs in the oven? I know. Same. I’ve done a frittata, (here is my fave The Best Frittata Recipe) but not just cracking eggs on a sheet pan. It really is foolproof and super easy. You also have the benefit of walking away from this dish (just not for too long) to prep the mimosas A Perfect Mimosa or set the table!

INGREDIENTS

  • 1 Tbsp Butter melted
  • 12 Eggs
  • Salt and Pepper

INSTRUCTIONS

Heat

Get your oven to 350F and swipe a butter-coated layer on your sheet pan.

Eggs

Crack eggs into the pan, scatter yolks if possible, salt and pepper them.

Bake

Bake 12 – 15 minutes according to your egg yolk preference. Enjoy!

FAQs & Tips

How to make ahead and store?

These easy-fried eggs in the oven can be stored in the refrigerator in an airtight container for up to five days. You technically can freeze them for up to six months. However, it does change the texture. Allow them to thaw in the refrigerator before reheating.

CAN I USE COOKING SPRAY OR OIL?

Yes! To keep the calories down, or if you are out of butter, feel free to use olive oil or cooking spray for the pan.

TIP & TRICK 1:

Have you ever heard your sheet pan make kind of a bang noise after a little while in the oven? This can happen when the metal expands and contracts when the temperature changes. For this recipe, it could cause your eggs to move around too much. Preheat the pan in the oven. This will allow the eggs to stay in place a bit better and cook a little faster.

TIP & TRICK 2:

We like to use just salt and pepper to keep it simple. Feel free to add a little paprika, onion powder, garlic salt, tarragon, or red pepper flakes.

Serving Suggestions

Eggs are so versatile and can be served with an array of options. 

You can pair them with bacon or sausage, which can also be made in the oven.

Remember this will make it NOT Whole 30 approved.

Ingredients

  • 1 Tbsp Butter melted
  • 12 Eggs
  • Salt and Pepper

Instructions

  • Preheat the oven to 350F. Brush a sheet pan with the melted butter so that it is greased all over.
  • Crack the eggs into the sheet pan, and try to get them to spread around the pan so that the yolks aren’t all together, but don’t worry if they aren’t.
  • Sprinkle the eggs with a pinch of salt and pepper and place into the oven to bake for 12 – 15 minutes depending on how hard you like them.
