Just kidding. We’re not winging this healthy buffalo chicken soup recipe. It’s nice and written down and perfected JUST 4 U. You know, like usual.
It just felt like the right thing to say since this creamy, spicy, SLURPY goodness tastes like BUFFALO CHICKEN WINGS in SOUP FORM. It’s kinda like the buffalo chicken chili but a little more…uh…soupy?
It also happens to be the LAST recipe of the annual “whole30 week” and it’s a welcome breath of fresh-not-Asian-flavored-air among the sea of healthy sesame chicken, keto beef and broccoli, and healthy sweet and sour chicken.
Question for you: would it be weird to serve slow cooker buffalo chicken soup at an upcoming game day party? Part of me says no because, DUH, it’s buffalo chicken which makes it perfect game food NO MATTER WHAT.
I’m just envisioning a spread of crockpot healthy buffalo chicken dip, buffalo chicken paleo sweet potato hash and buffalo chicken egg muffins and a bowl of creamy-spicy-smooooth chicken soup sounds like JUST the right fit.
But then I think back to the times where I’ve watched football with Mr. FFF and his team wins.
There’s JUMPING. There’s YELLING. There’s CHANTING and HOO-RAHING.
Yea. Mr. FFF is embarrassing when he watches football. Don’t tell him I told you.
Anyway. All of that ACTION just sounds like BAD NEWS BEARS mixed with paleo buffalo chicken soup. Can’t you just see a bowl of HOT soup flying across the room, scalding whatever unlucky person gets in its way?
Bet Mr. FFF wouldn’t be HOO-RAHING THEN.
So maybe serving soup IS a good idea? Wait. Did I just say that out loud?
Anyway. Back to crock pot soup and away from my questionable wife-ing.
It might sound a little weird to take the flavors of buffalo chicken and soup-i-fy them. It also might sound weird that ranch dressing is one of the ingredients BUTTTTT, liiike, have you ever dipped a buffalo chicken wing in ranch before though?
OMG. Literally the only reason I watch football.
Adding ranch gives you that whole finger-licking vibe and the richness balances out all the spicy hot sauce, so you don’t feel like a fire-breathing dragon after you slurpety-slurp-slurp down a bowl of bliss. It also makes this crock pot low carb buffalo chicken soup just SO creamy and velvety smooth and basically soup perfection.
You might never go back to buffalo chicken in wing form again.
Buffalo Chicken Substitutes
This is a paleo and whole30 friendly version of buffalo chicken soup but if that isn’t your jam and you want some more common ingredients, I got the 4-1-1 for you:
Coconut milk: You can use cream here! Don’t do anything low fat, or you’ll lose creaminess and taste. However, you’ll want to add this when you add in the tapioca starch, not at the beginning or it will curdle!
Paleo ranch: you can use regular ranch but, again, add it with the tapioca starch.
Tapioca starch: Cornstarch works great here!
Ghee: Use butter, just add a tsp more. Ghee is a little more flavorful/fatty than butter so you need a little extra to make up for it.
You know what else you need to make up for?
All the time you weren’t eating buffalo in soup form.

Ingredients
- 1/2 Tbsp Ghee
- 3/4 Cup Celery, thinly sliced
- 1/4 Cup Onion, diced
- 2 Cups Low sodium chicken broth
- 1/2 Cup Full fat coconut milk
- 1/2 Cup Whole30 Ranch dressing
- 1/4 Cup Hot sauce
- 1/2 tsp Sea salt
- 1/4 tsp Paprika
- 1/2 Lb Chicken thighs, large chunks of fat cut off
- 1 Tbsp Tapioca starch
- Green onion, sliced (for garnish)
Instructions
- Heat the ghee in a large pan over medium high heat. Add in the celery and onion and cook until they just begin to soften and brown, about 3-4 minutes. Add into a 7 quart slow cooker
- Add all the remaining ingredients up to the chicken and stir until combined. Nestle the chicken into the liquid. Cover and cook on HIGH for 3 hours.
- In a medium bowl whisk the tapioca starch and 2 Tbsp of the cooking liquid until smooth. Stir it back into the slow cooker, making sure it's mixed and smooth. Cook another 1 to 2 hours, or until the soup thickens a little bit.
- Remove the chicken from the slow cooker and shred. Stir it back into the slow cooker.
- Serve with green onions and DEVOUR!
