The instant pot has delivered with instant pot butternut squash, instant pot steamed broccoli, and countless other recipes! Today, it is going to do its thing ONCE AGAIN with instant pot artichokes. If you don’t cook and eat artichokes on a regular basis, this recipe might change that. The instant pot makes it SO easy, and they turn out so tasty! Hello healthy, easy and tasty side dish!

The great thing about instant pot recipes is that you often need only a few ingredients to make such a tasty recipe. This recipe only calls for a handful of ingredients, but the flavor and texture of the cooked artichokes is absolutely fabulous! Here’s what you will need:
- Large Artichokes
- Water
- Garlic
- Salt
- Parsley

How to Choose an Artichoke
It’s important to be selective when picking up artichokes to buy and bring home. Pick up the artichoke, firstly, and feel if it has a big of weight to it. The solid, heavier artichokes tend to be more fresh as they tend to get lighter as they get older. The leaves should be dark green and firmly closed and the leaves should squeak when you rub them!
How to make Artichokes in Instant Pot
Trim
Cut off the top of each artichoke to expose the inside and carefully trim off any dead leaves from the outside.
Assemble
Pour the water into your instant pot along with the garlic and salt, stirring to combine. Place the trivet into the pot and push it towards one side of the pot. Next, place the artichoke hearts inside as well, cut-side down.
Cook
Set the instant pot to sealing and cook for a while, until the artichokes are done. You will know they are done if you poke the bottoms with a knife and it slides in easily.

Does the size of an Artichoke impact Cook Time?
The size of your artichoke may impact cook time, yes, so you will want to be sure that each of the artichokes are approximately the same size. You also may need to add on a couple minutes of cooking time for larger artichokes.
How to eat Artichokes
Although these instant pot artichokes are absolutely delicious all on their own, they are best served as a side dish! I recommend serving them up alongside some bacon wrapped chicken thighs or air fryer pork tenderloin with a side of purple mashed potatoes or roasted russet potatoes. Any way you decide to serve these artichoke hearts, they will be sure to be a hit!

Ingredients
- 2 Large artichokes
- 2 Cups water
- 1 Tbsp Garlic, minced
- 1 tsp Salt
- 1 Bunch parsley
Instructions
- Wash and dry your artichokes and then cut about 1 inch off the top to expose the inside.
- Pull off any dry, dead leaves from the outside. Then, trim the other leaves (a scissor is easiest) by cutting the top tips of each leaf off.
- Pour the water in your Instant Pot and stir in the garlic and salt.
- Place the trivet inside and place the parsley inside, pushing it to the side. Then, place your artichoke hearts inside, cut side down.
- Cover, set the "sealing" and cook at manual high pressure for 15 minutes. Let steam release naturally.
- Use a knife to poke the bottom of the artichoke. If it goes in easily, it's done!
- Dip in your favorite sauce and DEVOUR!
