Corn has been around for almost ten thousand years. Native to North America, corn was originally smaller than what we enjoy today, but was developed by Native Americans and scientists, to the size that it is now. Fun fact right?

I don’t know anyone that doesn’t like corn. It comes in all varieties like Steamed Corn on the Cob, Corn Casserole, and Fresh Corn Salad. There are also corn chips, corn muffins, and cream corn. I feel like Grilled Corn On The Cob is a summer staple at my house, but I am thrilled to throw this effortless Sauteed Corn with Bacon into the rotation.

I have read that one way to eat healthy is to have a lot of colors on your plate. Not like a fruity cereal or rainbow cookies, but natural bright colors. This Sauteed Corn with Bacon is just that! Aside from being light and wholesome, it is effortless and can be served hot or cold.

Is Sauteed Corn with Bacon Healthy?

This Sauteed Corn with Bacon is a light, relatively healthy dish. Corn is packed with fiber and contains vitamins and minerals. It can support your digestive system. This recipe also calls for white and green onions, which help the body with inflammation, and aid in lowering blood pressure and blood sugar levels. It is also a lowish-carb dish.

You can make this dish vegetarian by omitting the bacon or substituting it with vegan bacon or red peppers.

Embracing the Sweet and Savory

I love almost everything sweet and savory, and this dish is up there! The sweetness of the corn is a very dominant taste on the palate. Then the bacon, onions, and butter are so delicious and savory. Our bodies are wired to enjoy and crave sugar, or glucose, and salt or sodium, are needed for our cells to function. So it is only natural to love this Sauteed Corn with Bacon!

INGREDIENTS

  • 3 1/2 cups corn kernels (from about 6 ears of corn)
  • 1/4 cup white onion, diced
  • 3 strips bacon, cut into small pieces
  • 1 tablespoon salted butter
  • Salt and black pepper to taste
  • 1 tablespoon green onions, chopped (optional for garnish)
Sauteed Corn with Bacon

INSTRUCTIONS

Crisp

Cook bacon in a skillet until crispy, then add butter and onions.

Saute

Once onions are soft, add corn and cook until tender.

Season

Add salt and pepper to your liking and garnish with green onions if you like.

Enjoy

Serve the delicious skillet corn warm!

Sure! I would say a one-quart bag of frozen corn would be a comparable amount.

What can I garnish this dish with aside from green onions?

I get that using both white and green onions may seem a bit “oniony” but it does come out great! However, I added fresh basil from my garden to this Sauteed Corn with Bacon and it was delish! Feel free to add any fresh herbs you have on hand.
