Is it just me, or have I only been making simple veggie side dish recipes?

That doesn’t make sense…of course it’s just me, it’s my blog lol.

But, it’s true. We’ve had roasted air fryer cauliflower. air fryer roasted potatoes and air fryer sweet potato fries, which are all super simple side dishes for your veggie-needing mouth, and now we have this simple stir fry.

Simple, but SO FREAKING GOOD oh my gosh.

It’s like a fancier blanches asparagus recipe in the sense that it’s stir fried, cut pretty and has citrus-y flavor!

Can you put Asparagus in Stir Fry?

I am a LOVER of stir fry. It’s a quick and easy weeknight meal which is always a winner in my books! You can dress it up or dress it down and either way, you know it’s going to keep you satisfied. I love to cook up some Easy Paleo Cashew Chicken Stir Fry or Easy Low Carb Keto Stir Fry because I know it’s gonna be delicious, nutritious, and easy! Another point to add to the list of why i I love stir fries is that you can mix it up and get creative with them. Now I know what you’re thinking: an asparagus stir fry recipe?? That’s wierd! But trust me on this one- you’re going to LOVE this new take on stir fry!

Asparagus Stir Fry Ingredients

Now that I’ve sparked your interest, I’m going to show you what you’ll need to grab from the grocery store to make this delicious stir fry recipe. It uses wholesome, healthy ingredients with a bit of tang to go along with it! Check it out:

  • Asparagus
  • Olive Oil
  • Fresh garlic, minced
  • Fresh ginger, minced
  • Orange Juice (not from concentrate)
  • Sesame Oil
  • Salt

How to cut Asparagus for stir frying

If you’re familiar with asparagus, you probably know that you need to snap/cut off the woody ends before cooking it. For this stir fry asparagus, it’s no different. You’ll want to make sure you snap or cut off the stalky ends and then to slice it, I recommend slicing it diagonally into chunks. Be sure to cut evenly sized pieces so that the asparagus cooks evenly in the pan!

How to make asparagus Stir fry

Now that we’re all set to go with our ingredients, let’s get cooking! MMM, I’m hungry already!

Slice

Snap off the stalky ends of each piece of asparagus and then slice them all diagonally into pieces.

Cook

Add the olive oil to a large pan and heat it up to medium-high heat. Add in the asparagus and cook it until it is fork tender. This should take approximately 4-5 minutes. Be sure to stir frequently as the veggies cook.

Simmer

Add in the garlic and the ginger and continue to cook for 1 minute or until fragrant. Add in the orange juice and simmer for 1 minute or until evaporated.

Finish it off

Remove the pan from heat and stir in the sesame oil and salt. Serve it up and DEVOUR!

What to serve with it

Stir fry is delicious all on its own, but if you want to spice it up and make it a meal, I recommend serving this asparagus stir fry recipe with hot, cooked rice. You can use regular white or brown jasmine or basmati rice, or if you want to make this meal into a low carb version, I recommend cooking up some cauliflower rice! Check out How to make cauliflower rice to learn 4 different ways to cook it up! If you want to serve some protein along with this stir fry, I recommend chicken!

ASPARAGUS FAQ

do you need to soak asparagus before cooking?

No! Sometimes, soaking asparagus is recommended in recipes like this one, but it is not necessary. I did not soak my asparagus spears before cooking them up into this stir fry.

Is asparagus good for you?

ABSOLUTELY! Asparagus is a fantastic choice for a veggie side dish because it is loaded with nutrients and vitamins to support a healthy diet. It is high in fiber, folate and vitamins A, C, and K, just to name a few nutritional benefits.

is asparagus keto?

Yes! Asparagus, on its own, fits the criteria to be a keto friendly veggie. However, in this recipe I used orange juice which is not keto.
