How to cut Asparagus for stir frying
If you’re familiar with asparagus, you probably know that you need to snap/cut off the woody ends before cooking it. For this stir fry asparagus, it’s no different. You’ll want to make sure you snap or cut off the stalky ends and then to slice it, I recommend slicing it diagonally into chunks. Be sure to cut evenly sized pieces so that the asparagus cooks evenly in the pan!
How to make asparagus Stir fry
Now that we’re all set to go with our ingredients, let’s get cooking! MMM, I’m hungry already!
Slice
Snap off the stalky ends of each piece of asparagus and then slice them all diagonally into pieces.
Cook
Add the olive oil to a large pan and heat it up to medium-high heat. Add in the asparagus and cook it until it is fork tender. This should take approximately 4-5 minutes. Be sure to stir frequently as the veggies cook.
Simmer
Add in the garlic and the ginger and continue to cook for 1 minute or until fragrant. Add in the orange juice and simmer for 1 minute or until evaporated.
Finish it off
Remove the pan from heat and stir in the sesame oil and salt. Serve it up and DEVOUR!
What to serve with it
Stir fry is delicious all on its own, but if you want to spice it up and make it a meal, I recommend serving this asparagus stir fry recipe with hot, cooked rice. You can use regular white or brown jasmine or basmati rice, or if you want to make this meal into a low carb version, I recommend cooking up some cauliflower rice! Yes! Asparagus, on its own, fits the criteria to be a keto friendly veggie. However, in this recipe I used orange juice which is not keto.
