Air-fryer Hasselback Potatoes is a fun method of serving baked potatoes that has been around since the 1950s. Originating in Sweden at the Hotel Hasselbacken, they’re a cross between jacket potatoes and sautéed potatoes. Jacket potatoes always seems like such a formal term for a vegetable! Once you’ve tried them, experiment with the recipe, mixing up the herbs and spices, and using different types of potatoes.

You’re going to love the presentation of these potatoes, as well as the texture: crispy on the outside and creamy on the inside. When you present them on your guests’ plates, everyone will be impressed with your chef’s skills! Just be sure you have a sharp, large knife for the many cuts you’ll be making.

Are Air-Fryer Hasselback Potatoes Healthy?

The healthfulness of potatoes is an oft-debated topic. These require very little oil to prepare in the air fryer. They provide plenty of potassium and fiber, and even five grams of protein. Not too shabby, especially when compared to other methods of serving potatoes. Plus, the calorie count is relatively low.

The recipe is vegan as written. With such a basic but tasty carb on the plate, many vegetable or fruit side dishes will go well with this, providing for a well-rounded meal.

Pairings for Hasselback Potatoes

It’s important to provide your potato with the right accompaniments. The usual toppings for loaded baked potatoes—sour cream, chives, butter, bacon bits, cheddar cheese shreds, or even chili—can be used as a dip. (Just a heads-up: You may want to leave your calorie counter in the drawer!)

You could even go with a theme, such as Southwestern flair with black beans, corn, avocado, and salsa. An Irish-forward dish might include cabbage or brussels sprouts alongside. Lemon Greek Potatoes might appeal to you. Don’t be afraid to experiment with this one. Several different herbs and spices will add flavor, aroma, and nutrition. Try dried dill, lemon-pepper, sage, thyme, or garlic powder. Small cloves of garlic in between several of the slices would be lovely.

How to Make Ahead and Store?

These are best made and served immediately. If there are leftovers, you could cut each partial slice all the way through then store the resulting slices. The air fryer is a great tool for reheating. Leftovers can be stored in an airtight container in the fridge for 3-4 days. If freezing, cool completely then wrap in freezer-safe foil, store in a resealable freezer bag, and store for up to a month. When reheating, be sure to thaw in the fridge first. Be aware the texture will have changed.

Why Won’t the Potatoes Crisp up in the air fryer?

Air fryers require circulating air or they’re just not going to work effectively. If the air fryer doesn’t seem to be giving the results you’d like, consider whether you’ve overcrowded the basket. When the suggested cooking time is over, be sure to check the inside of the potato for doneness. If they aren’t, add a few minutes at a time until they are done to your liking.

Should I add herbs toward the end of the cooking time?

The dried herbs and spices can go on right after the oil. The oil will help them stick to the potato. Fresh herbs, such as chopped chives or parsley, should be added at the end of the cooking time, as soon as you remove the potatoes from the air fryer.

There are so many good choices to pair with these potatoes. Try to provide dishes that can be served in varying portions, as the potatoes can range in size. Some good options are Coconut Milk Quinoa Fruit Salad, which will round out the meal nicely with protein and fruit. Fruit Salsa with Grilled Chicken is a lovely option your guests probably don’t encounter too often. Ingredients

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley chopped for garnish (optional)

Instructions

  • Preheat the air fryer to 400°F.
  • Clean the potatoes and pat them dry. Make thin slices along each potato, stopping just before you cut through, so the slices stay connected at the bottom.
