What’s salty, crispy, crunchy, and delicious but not fried with oil? Air fryer zucchini chips!

Seriously, while it might seem strange, zucchini actually makes some super flavorful chips that you’re bound to enjoy way more than store bought. Plus, the air fryer speeds up the cooking process and reduces the amount of oil needed. Not only is this a healthy alternative to potato chips; it’s also a fun way to experiment with your new air fryer. Ready in less than an hour, this recipe makes a heaping helping of chips for a healthy snack or dinner side. With the perfect balance of salt and pepper, these zucchini chips are versatile, mouthwatering, and super wholesome.

Are Air Fryer Zucchini Chips Healthy?

Thanks to the air fryer cooking method, these chips are as healthy as they come! They’re also much lower in sodium than store-bought chips, with no added sugar. As a low-key superfood, zucchini is high in vitamins C and A, as well as potassium, folate, and fiber. You’ll get your daily dose of veggies while also satisfying your crunchy cravings!

Tasty Tips for your zuke

The seasoning possibilities for these chips are nearly endless! Some of my favorite spices to add to zucchini chips are smoked paprika, cumin, or even cinnamon for a sweeter twist. You can also make a dessert version of this recipe by drizzling them with honey, cinnamon, and nutmeg. I even serve them on top of vanilla ice cream or yogurt. This recipe is a great base for playful experimentation, so have fun with it and expand your palate!

FAQs & Tips

How to Make Ahead and Store

When storing in a container, place sheets of paper towel between layers to absorb extra moisture and help keep them crisp. For best results, store the zucchini chips in an airtight container at room temperature for up to one week. If you need them to last longer, consider refrigerating them. This way, you can prep them in advance and enjoy them as a snack throughout the week.

Tip 1: Use a mandoline

Alongside an air fryer, the mandoline is one of the best tools to have in your kitchen. It slices so thinly that it makes the perfect chip out of any veggie, especially zucchini and potato. A mandoline will ensure that each slice is 1/8 of an inch thick, uniform, and evenly cooked.

Tip 2: Sweat the Zuke

I know, it sounds strange, but it’s a good technique for getting the crispiest, crunchiest chip possible. All you do is sprinkle the slices with salt and let them sit for 10 minutes before cooking. Then, press them gently under a towel to remove excess moisture and season thoroughly. You’ll be amazed by how much more the flavors shine through and how it cooks perfectly!

Serving Suggestions

While these bad boys are brilliant on their own, you can also dip them in homemade Honey Mustard Sauce, Blue Cheese Dip, or the unique and scrumptiously satisfying Curry Sweet Potato Almond Butter Dip.

And, of course, zucchini chips are a delectable side with sandwiches. I recommend trying this Chicken Pesto Sandwich for a simple yet special picnic meal!
