If you’re one of those people who enjoy prepping their breakfast the night before, yogurt chia seed pudding could be something worth adding to your morning routine. Between the Greek yogurt, chia seeds, and fruit, there is more than enough nutritious goodness to keep you full for hours and serve as fuel for a productive morning. The nutritional value of the pudding is exactly what your body wants this early in the day. Plus, all you have to do is mix the ingredients together and leave them in the fridge overnight. That means your breakfast is ready as soon as you wake up.

Just as important, your taste buds will enjoy what’s waiting in the fridge. With a little bit of honey or maple syrup part of the mixture, the pudding ends up sweet but not overpowering. Also, by allowing the chia seeds to sit overnight, they give the pudding an interesting texture that’s a little like tapioca. Don’t forget to add the fruit of your choice on top of the pudding for a little more sweetness and flavor.

Is Yogurt Chia Seed Pudding Healthy?

The combination of yogurt, chia seeds, and fruit is a healthy combination. It’s rich in calcium, potassium, and fiber. The yogurt is an excellent source of protein while the chia seeds are rich in omega-3s and vitamins. With just 8 grams of fat and 5 grams of sugar per serving, this is a well-balanced and nutritious breakfast. In fact, some consider it to be one of the healthiest breakfast options possible.

Simple and Delightful…

This recipe is as simple as it gets, so there is no need to overthink it. But one thing you can do is stir the mixture multiple times before leaving it in the fridge overnight. Try stirring it after it’s had 30 minutes in the fridge and then stir it again after another 30 minutes. After that, you can leave it in the fridge overnight. In the morning, you also want to stir the pudding one more time to help take out any clumps. Finally, don’t forget to add some fruit, granola, or another topping to enhance the pudding even further.

INGREDIENTS

  • 3/4 cup plain Greek yogurt
  • 2 tablespoons chia seeds
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • Fresh fruit for topping (e.g., berries, banana slices)

Combine

Mix yogurt with chia seeds and flavorings.

Chill

Refrigerate to thicken.

How to Make Ahead and Store

In addition to putting fruit on top, a Coconut Milk Quinoa Fruit Salad is a great way to complement your yogurt chia seed pudding. Ingredients

  • 3/4 cup plain Greek yogurt
  • 2 tablespoons chia seeds

Instructions

  • In a serving bowl, combine the Greek yogurt, chia seeds, honey or maple syrup, and vanilla extract. Stir thoroughly until all ingredients are well mixed.

  • Cover the bowl with a lid or plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to swell and the mixture to thicken into a pudding-like consistency.
