Salt and Pepita Hard Boiled Egg Snack

This hard boiled egg snack gets dipped in the easiest 3 ingredient dip for a healthy, high protein snack that is paleo, whole30, low carb and keto friendly!

Just going to put this out there into the world.

This might be the easiest recipe I have ever made. Easier than air fryer hard boiled eggs. Easier than making healthy deviled eggs with Greek yogurt.Maybe even easier than the low carb keto mug cake and I thought that recipe was the peak of my easy-making-recipe-ness.

Honestly, wasn’t even going to post this recipe but then Mr. FFF was like WHY WOULD YOU NOT? It’s so good, people like easy recipes and I bet they need hard boiled egg snack ideas.

So, here we are.

How to make Had Boiled Eggs for this Hard Boiled Egg Snack

If you do some Googling, you will find a ton of articles on how to hard boil an egg but this is how I do it:

Prep

Put your eggs in a VERY large pot and fill so the eggs are covered by about 2 inches. If you are only using 3-4 eggs, you only need to cover them by about one inch

Boil

Place the pot on high heat on your stove and bring to a boil. Once boiling, turn off the heat and cover the pot with a lid but do not remove it from the heat.

Stand

Let the pot stand on the stove for 10-12 minutes.

Drain

After time is up, drain the hot water and fill with ice-cold water and let stand for 10 minutes.

Then you just have to peel and eat!

Ways to eat Hard Boiled Eggs

My personal favorite way to eat hard boiled eggs is with this salt and pepita dip (see what I did there ???? )  I first tried a product like this at a food convention and feel so head-over-taste buds love that I had to try to make it at home.

And now this simple, 3 ingredient dip always sits on the counter and I ALWAYS have it on hand, along with hard boiled eggs because it’s my favorite of all hard boiled egg recipes and is just the perfect snack.

Protein? Check! Fat? Check! I always go protein + fat or protein + carbs to keep it simple at snack time so these hard boiled egg snacks are checking ALL THE BOXES.

What to eat with hard boiled eggs?

If you don’t want to go the stand-alone-snack route. You could also make these crispy-crunchy-salt and pepita eggs to go with some:

  • Easy Sweet Potato Hash browns
  • Pan Con Tomate
  • Grain Free low Carb Keto Granola
  • Fluffy Cottage Cheese Pancakes

Or, really, any other breakfast item that your heart wants.

Or really, the sequel, any dinner item because these little hard boiled egg snacks work for any meal of the day.

Just pinky promise me you won’t try to make ‘em even EASIER and skimp out on the toasting of the pepitas mmkay? It adds some serious flavor that takes these OVER THE EDGE.

Just when you thought you had seen everything done with eggs right?

Egg Snack Recipe

Ingredients

  • 8 large Eggs
  • 1/4 cup Pepitas
  • 1 teaspoon Sea Salt
  • 1/4-1/2 teaspoon Black Pepper (depending on how peppery you like your eggs)

Instructions

  • Preheat your oven to 400°F.
  • Place the eggs in a very large pot in one layer. Cover them with 2 inches of water and bring to a boil on high heat. Once they reach a rolling boil, turn off the heat (but don’t take the pot off) cover and pot and let stand for 10-12 minutes. Then, dump the water and fill with cold water and let stand for 10 minutes
  • While the eggs cook, place the pepitas on a small baking sheet and bake until lightly golden brown, about 5-7 minutes.
  • Transfer the toasted pepitas, salt and pepper to a small food processor or spice grinder (I used my magic bullet) and pulse until broken down but there are a few small chunks for texture.
  • Peel the eggs and DEVOUR by dipping into the pepitas mixture!

Tips & Notes:

ou may end up having more dip leftover. It stays good in air-tight container for a long time!
