What is it about melted cheese that just hits differently? Whether it’s drizzled over a plate of crinkle fries or steeped in a bowl of butternut squash noodle mac, hot and velvety cheese makes everything better! It’s so darn good, you could serve it up in a bowl all on its own and eat it like soup! (Not that I’ve ever done this, of course…) Or you can go the traditional route. We’re talking chips, celery sticks, carrots, and anything else you want to plunge in that orange-colored creamy dream.

Our cheese dip is gonna show you just how powerful it can be. With two different kinds of cheese, lots of milk protein, and delicious spices, there’s nothing you can’t doll up with a little dollop of cheese dip!

Is Cheese Dip Healthy?

Because of the dairy and flour, this dip is only suitable for vegetarian diets. That protein, however, will keep you full while the nutrients from the veggies you dip into it will do your body good.

If you’re looking to make a vegan cheese dip, you’ll have to do some work. Cashew milk, vegetable oil–based margarines, and vegan cheeses can be used to make a vegan cheese dip with just as much flavor!

If you’ve only ever dipped with corn flour tortilla chips, you’re missing out on some of the tastiest (and most nutritious) dippable snacks available.

Cheese dip tastes fantastic on celery stalks and carrots, both of which are low-carb and low-calorie options (the carrots are also rich in beta-carotene!). Another fantastic option for healthy dipping is chickpea chips; they’re protein packed and high in fiber! For a lot of electrolytes, try some towel-dried pickles with your dip. And, if you’re feeling adventurous, pair our spiced cheese dip with apple slices and grapes for a charcuterie flavor.

INGREDIENTS

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 8 ounces cheddar cheese, shredded
  • 8 ounces Monterey Jack cheese, shredded
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Salt to taste
  • Tortilla chips or fresh vegetables for serving

Melt

Melt butter and blend in flour.

Thicken

Whisk in milk and cook until thickened.

Cheese

Add cheeses and seasonings, melt until smooth.

How to Make Ahead and Store?

Cheese dip is pretty easy to make and even easier to reheat! Just store your leftovers in a sealed, microwave-safe container and refrigerate until your next dippin’! Reheat in the microwave using short bursts interrupted by frequent stirs to prevent the sauce from separating into oil and water.

My queso is a little too loose! How do I thicken it?

You can thicken your cheese dip one of two ways: use a little bit of flour or cornstarch as a thickening agent or just add even more cheese (especially if that cheese is relatively dry like Parmesan or sharp cheddar)!

My cheese dip is so thick! How do I loosen it?

Add milk or butter to your cheese dip to loosen it up. Reincorporating a warmed fat into the dip should help it homogenize and transform it from a stiff bowl of cheese into a velvety smooth sauce!

You can’t go wrong serving up a delicious bowl of cheese dip alongside some healthy Mexican cuisine–inspired dishes! Go for some tasty tofu tacos or zesty zucchini boats topped with tuna! If you want to drizzle that melted cheese all over something savory, try grilled brussels sprouts or roasted broccoli and carrots—nothing goes better with cheese than a little bit of char!

Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 8 ounces cheddar cheese shredded
  • 8 ounces Monterey Jack cheese shredded
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Salt to taste

Instructions

  • In a medium saucepan, melt the butter over medium heat.

  • Whisk in the flour and cook for about 1 minute, until the mixture is slightly golden and no longer smells raw.

  • Gradually add the milk, whisking constantly to prevent lumps, and cook until the mixture thickens enough to coat the back of a spoon.

  • Reduce the heat to low and add the shredded cheeses, garlic powder, onion powder, and paprika. Stir until the cheese is completely melted and the dip is smooth. Season with salt to taste.
