This Low Carb Keto Cucumber Salad is an easy summer side that uses only 6 pantry essential ingredients! Creamy, naturally gluten free and only 50 calories!

AND CHECKKKKK. Because it’s been a life goal to use the word quintessential in a blog post for the past 6.5 years and finally here, we are.

SRSLY though. This might just be the best cucumber salad because it’s:

  1. SUPER creamy
  2. Just a little bit tangy
  3. ULTRA fresh
  4. STUPID easy
  5. Make ahead perfect

So, yea. Pretty much all your summer side dish dreams coming true in this cucumber salad recipe. Pair it with some Cajun burgers with sweet potato buns, a low carb cauliflower potato salad and some cheesecake stuffed strawberries and you are ready to be the food VIP of your Fourth of July shin-dig!

Is it just me or is Summer food the absolute best? It’s always so smoky and makes the air smell really good when you’re walking up and down the streets at night, smelling other people’s dinners wafting through the air.

But, back to this low carb keto cucumber salad.

Are cucumbers good for you?

Cucumbers add a crisp, fresh dynamic to any dish. But aside from it tasting good it has a lot of benefits for your body as well. They are low in calories, high in soluble fiber, and high in antioxidants, vitamins and minerals. This means cucumbers aid in weight loss, promote healthy digestion, boost the immune system, and help prevent certain diseases. They also have high water content which balances hydration in the
body.

Are cucumbers low carb?

Yes! Cucumbers are made of a LOT of water which naturally makes them low carb.

It also naturally makes them very very hydrating after you drink one too many red white and blueberry mojitos on July 4th, you feel me? ?

You guys know I don’t follow any specific diet, but this cucumber salad recipe just so happens to be low carb and still absolutely fabulous. It’s got this creamy and tangy sour cream dressing with zesty little pops of vinegar and fresh notes of dill spiraling all over your tongue in a way that is just so fresh and addicting!

Better yet, it actually gets better as it sits in the refrigerator and the flavors develop, making it super easy for you to be that food VIP because you can make this a day ahead! Just grab it and GO GO GO!

Can you eat cucumber on keto?

Yes, you can. Cucumber is popular on salads especially. As stated it has a lot of health benefits. But what makes it fit for the keto diet is that it has low carb content.

You can cut it into sticks and substitute it for fries, or you can turn it into strands and use it as noodles or pasta. And if you want to further cut down on
carbs just peel the cucumbers before eating it.

How to make Low Carb Keto Cucumber Salad Dairy Free

Because Mr. FFF can’t have dairy, I’ve also tested this with both dairy and lactose free sour cream and both work equally great! So, no one has to miss out on the refreshing cucumber salad goodness this summer!

Or if you want it to be dairy free and a little less traditional, you could try my mediterranean cucumber salad.

Side note: have also tried it without onions to make it low FODMAP, since he also can’t have onions (??) Works too!

I’m honestly not even sure if we can call this a recipe based on the fact that you mix a few ingredients in a bowl, slice some cucumber, toss it in and – VOILA – it is done!

But, considering I do have some ingredient measurements for you, we’re going to call it a recipe and not look back.

Unless our bowl of cucumber salad is behind us ‘cause then we are looking back A-N-D walking back on over to it.

Trust me my internet friends, you will not be wanting leave this CREAMY cucumber and onion salad alone this Summer.

How to store low carb cucumber salad?

You will need to store your cucumber salad in an air tight environment. This will ensure that the cucumber salad stays fresh longer and it will stop bacteria from growing on your food. Transfer your leftover cucumber salad to a container with a tight lid or jars with covers. If you don’t have those you put your
salad in a bowl and cover the top with plastic wrap.

Low Carb Keto Cucumber Salad

Serves: 4 People, as a side
Prep: 15 minutes minutes
Total: 3 hours hours 15 minutes minutes

Ingredients

  • 5 Tbsp Full-fat sour cream
  • 1 1/2 Tbsp White vinegar
  • 2 tsp Fresh dill, minced
  • 1 1/4 tsp Monkfruit Sweetener (I use a blend with erythritol – you cab just use regular sugar too!)
  • 1/4 tsp Sea salt, or to taste
  • 1/8-1/4 tsp Black pepper, to taste
  • 1 Large Cucumber, thinly sliced
  • 1/4 of a Large Onion, thinly sliced

Instructions

  • Mix all of the ingredients up to the cucumber together in a large bowl until well mixed.
  • Add in the cucumber and onions and stir to coat.
  • Cover and refrigerate for at least 3 hours to develop flavors.
  • DEVOUR!

    Can you give the measure of cucumber by weight? This is the only way to calculate accurate carb amounts. Thank you.

      Hi Anette, A large cucumber is usually 10 to 12 ounces. Hope helps!
