Quick, simple and super fresh. This Mediterranean Salad Dressing is the best!
Table of Contents
This Mediterranean salad dressing is praised for its simplicity and versatility. Made with only a few clean ingredients, it’s suitable for a variety of salads and dishes of all sorts. It has a tangy, distinct taste, and can easily be enhanced with other spices or with fresh or dried herbs. It also pairs well with dishes like this Mediterranean Chickpea Pasta Salad and can serve as a dip or sauce for Instant Pot Artichokes. The best part is that it’s so easy to make, and keeps for a few weeks, sealed and stored in a mason jar! Fresh is always best, especially when it comes to easy dressings like this, and they taste so much better than bottled!
Is Mediterranean Salad Dressing Healthy?
This dressing is much healthier than store-bought dressing, and avoids the preservatives and additives often found in commercial dressings. It’s made with natural ingredients like extra virgin olive oil, red wine vinegar, and herbs, all of which are key components commonly found in Mediterranean cooking (one of the best diets to live by!).
You can always opt to use honey or maple syrup rather than sugar for a slightly healthier take. Or replace the red wine vinegar with raw apple cider vinegar for a nutritious spin. Raw apple cider vinegar contains modest amounts of probiotics, bacteria-killing acetic acid, and antioxidants. One of my favorite brands is Bragg, and you can usually find them at your local grocery store.
Variations for days…
There are so many different ways to not only use this dressing but to create it. The olive oil, garlic, salt and pepper give it a perfect base, along with the dried herbs. Feel free to replace the red wine vinegar with Dijon mustard for a more creamy spin. Or continue to add in a few more spices and herbs like thyme, tarragon, onion salt and a pinch of cumin. I also love to add some freshly squeezed lemon juice to mine, and if you don’t have lemon juice then lime will work as well. Some zest from the two also adds a vibrant boost! Mix in some Sanniti capers for a slightly salty flavor and pop of color or even sprinkle in some fresh chives.

FAQs & Tips
Make your Mediterranean salad dressing ahead of time by mixing together all of the ingredients in a mason jar and storing in the refrigerator until ready to use. It will last in the fridge for up to 2 weeks.
Sometimes the dressing will be too thick and might need a little more liquid. If that’s the case, add a drop of water to thin the consistency of the dressing.
I highly suggest you use high-quality olive oil for your dressing. Colavita’s organic extra virgin olive oil is one of my favorites and can be found at Whole Foods or a local grocery store.
Serving Suggestions

It also acts as a wonderful marinade for grilled veggies and meats or poured over roasted beets.
