Hamburger potato casserole has got to be one of the most American dishes out there. Nothing fancy, just good eats. But it’s also the type of recipe culinary elites would likely snub. Whatever. They don’t know what they’re missing. 

This hearty casserole brings together tender potatoes, savory beef, and a creamy mushroom soup-based sauce, all topped with melted cheddar cheese. My kids love eating casseroles like this, and it’s easy to see why. I love it for its simplicity! It’s really easy to throw together and is the perfect leftover dish!

Is Hamburger Potato Casserole Healthy?

You’ll note from the recipe that I opt for lean beef, which brings down the saturated fat content quite considerably. But if the heavy cream and cheese feel like too much, I get it. You can use half and half and reduce the cheese to ½ cup. Also, I’m sure your grocery store offers their light cream of mushroom soups as well. Keep in mind, that reducing the fat content of all the ingredients may lead to a drier casserole though.

The case for casseroles…

Among younger generations, casseroles have gotten a bad rap. But as Millennials and Gen Zers age, I think we are going to see a rise in casserole fans. After all, they’re the ultimate comfort food. Even better, they’re easy to make and versatile. How could they not be? It’s a whole meal in a dish! Casseroles allow for endless customization, and yes, that includes our humble hamburger casserole, too! 

From a practical standpoint, casseroles are a delicious way to reduce food waste. Why not throw those extra roasted vegetables last night into a casserole? Have some steak in the fridge? Slice it up and toss it in a casserole. You get the idea.

INGREDIENTS

  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups russet potatoes, peeled and thinly sliced
  • 1 can (10.5 ounces) cream of mushroom soup
  • 3/4 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup shredded cheddar cheese

INSTRUCTIONS

Preheat

Prepare oven for baking.

Brown

Cook beef with onions and garlic.

Layer

Assemble potatoes and beef in layers.

Bake

Cook casserole and add cheese topping.

Devour!

How to Make Ahead and Store

Hamburger casserole is easy to prep ahead and store in the fridge for up to 24 hours. However, let the casserole sit at room temperature for at least 30 minutes before putting it in the oven. For leftovers, store them in an airtight container for up to 3 days in the fridge.

I don’t have russet potatoes on hand. Can I use other types of potatoes? 

They won’t be as starchy, but Yukon Gold or red potatoes should also have a satisfying texture.

Can I add vegetables? 

Yep! I usually add whatever’s left in my fridge, like roasted veggies from another meal, spinach that’s about to go bad, and discarded peppers and mushrooms I hadn’t used from stir-fries!

Serving Suggestions

Like I said, this casserole is a meal in and of itself. But a side of Instant Pot Green Beans or whatever steamed vegetable you prefer is never a bad idea. Serve this casserole with a fresh green salad or Steamed Broccoli for a balanced meal. It also pairs deliciously with Corn on the Cob and a plate of Air Fryer Biscuits. And if you’re still hungry after all that, rustle yourself up some Apple Coleslaw!

Ingredients

  • 1 pound lean ground beef
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 3 cups russet potatoes peeled and thinly sliced
  • 1 can 10.5 ounces cream of mushroom soup
  • 3/4 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a skillet over medium heat, cook ground beef, onion, and garlic until beef is browned and crumbly; drain excess grease.

  • In a bowl, mix cream of mushroom soup, milk, salt, and pepper.

  • Layer half of the sliced potatoes in a 2-quart baking dish. Top with half of the beef mixture and half of the soup mixture. Repeat layers.

  • Cover with foil and bake for 1 hour. Uncover, sprinkle with cheddar cheese, and bake for an additional 20 minutes, or until cheese is melted and potatoes are tender.
