These Thai-style lentils are stewed in creamy peanut butter and coconut milk. They’re a vegetarian, one pot wonder that is perfect for Meatless Monday!
Do you ever have one of those “No good VERY BAD DAYS” where there is about eleventy billion things wrong, you think the world hates you and that you should probably just sit down and watch Millionaire Matchmaker and eat chocolate lava cakes for all the days that you have left on this earth because why bother living?
Yes. I like Run on sentences. And capitalizing random letters.
No, I am totally not being over-dramatic.
And, I can’t confirm or deny that I watch such frivolous TV shows. But, you should watch it because someone told me it’s really funny.
Anyway. Back to being a dark cloud.
Let me tell you about the day that I made this.
It started off lovely. I woke up, looking fresh as a daisy (sidenote: I’m lying about daisy freshness) the sun was shining, and the birds were singing. It was a beautiful, spring day in Seattle.
Then, I went to the gym. And everyone was using ALL the machines that I wanted to use. I know. Not a big deal. I just changed my work out up and moved on.
Then I got home, and had to unload the DISHWASHER. I could just end there because WHY IS UNLOADING THE DISHWASHER SO ANNOYINLY AWFUL? Does anyone else have this kind of hatred towards the magical cleaning machine?
But, I pressed on. And by “pressed on” I mean I dropped a HYOOGE GLASS bowl right on my toe. Like not to the left of it. Not to the right of. RIGHT ON TOP.
I fell to the ground in pain. The bowl shattered into a bazillion little pieces (and it was a bowl near and dear to my <3. WAH.)
But, not only did I just fall. I fell right smack on my tail bone. So I was sitting, crying (I cry really easily peeps. My eyeballs? They be like a WATER PARK.) in the middle of a field of smashed, sharp glass.
I swept up the shards of glass (and whatever dignity I had left) off the floor and continued. In a lot of pain and agony and suffering and general badness.
Then, it was time for recipe creation. Specifically, these OH-MY-GOSH-THE-CREAMINESS bowls of peanut buttery, spinach (HELLO SUPERFOOD) yums.
Except, when I went to add in a little sriracha, I didn’t realize the lid wasn’t completely screwed on.
And, yes, a whole bottle of sriracha is, IN FACT, too much for this one-pot of soft and tender lentils. Unless, you know, you have some sort of aspiration to be a fire-breathing dragon person.
I don’t think scales look good on you though.
This is the point where I gave up and decided to throw in the towel.
I mean, not literally. But maybe it would have mopped up the sriracha?
Anyway.
I came back to the recipe the next day. Screwed that lid on MEGA DOUBLE SUPER DUPER TIGHT with GLUE, and tried again.
And, my peeps, these are the lentils that will actually make you LOVE lentils. Remember the red lentil curry where I didn’t even know what they were?
Well, I now know that they are MADE for bathing in coconut milk, getting cozy with creamy peanut butter and a little bit fresh with spinach.
Is it just me or do these lentils sound like they’re going on a hot date.
Awkward.
