You know those recipes that are just SO easy and delicious and simple!? RICE is a staple in our home because it pairs with so many different curries and sauces and soaks up all the flavorful goodness in them! Today’s coconut rice in instant pot is a go-to rice recipe in my household because it’s extremely fast and easy, and who doesn’t love that creamy, coconutty flavor combined with perfectly textured rice? It’s also dairy free and uses chicken broth for a boost of protein and flavor, too! You and your crew are going to love it!

Ingredients Needed

This recipe only uses a handful of ingredients, making it really easy and uncomplicated to make. Sometimes, the best recipes are the most simple and this one is a keeper! Here’s what you’ll need to round up to make some coconut milk rice instant pot:

  • Jasmine Rice
  • Full fat coconut milk
  • Water or chicken broth
  • Salt
  • Sugar

How to make Instant Pot Coconut Rice

Rinse

Place the rice in a mesh strainer so that none of the rice can get out. Rinse under cold water until the water runs clear.

Combine

Add the rice along with all the other ingredients to the instant pot and set it to sealing. Press the “rice” button on the instant pot. 

Cook

Allow the rice to cook until it’s done. Let the steam release naturally for at least 10 minutes, then serve it up and enjoy your coconut rice instant pot!

What to serve with Instant Pot Coconut Rice

The better question would probably be “What can I NOT serve with this rice?” Seriously though, this delicious and fast rice pairs well with so many recipes here on the blog. From curries to stir fries, it’s the PERFECT rice to serve up to your family and guests! Here are a few recipes I highly recommend serving with this rice:

Coconut Rice FAQ

What kind of coconut milk is best?

I definitely recommend using full fat coconut milk for this rice recipe. It’s got that creamy flavor that brings life to the recipe, and is also a healthy fat!

Will coconut milk burn in the instant pot? 

This recipe is designed so that the coconut milk will not burn, if you follow it as written. The high fat content prevents burning!

How do I avoid burning the rice?


Make sure to not overcook your rice to avoid burning. Also, feel free to double batch so there is more in the instant pot. This will help the rice to all cook evenly and prevent burning.

What kind of rice is best for instant pot rice?

I recommend using jasmine rice for this recipe. It cooks evenly and quickly and the soft and sticky texture of it when it’s cooked just can’t be beat, in my opinion!

Ingredients

  • 1 Cup Jasmine rice
  • 1/2 cup Full fat coconut milk
  • 3/4 Cup Water or chicken broth
  • 1/4 tsp Salt
  • 1/2 tsp Sugar (optional)

Instructions

  • Place the rice in a mesh strainer and rinse under cold water until the water runs clear.
  • Combine all the ingredients in the instant pot. Set to sealing and press the "rice button."
  • Once cooked, let steam release naturally for at least 10 minutes.
  • Fluff and DEVOUR!
