These Homemade Pumpkin Protein Bars taste just like pumpkin pie but they are easy, gluten free healthy and great for on the go breakfasts or snacks!

Pumpkin Spice AND protein in ONE RECIPE? This makes me very very excited and I know it’s going to make you very excited too.

Theses are different then the paleo protein bars that I shared a while back in the sense of 1. flavor (duh) but also TEXTURE. 

They’re not as densly chewy but more muffin-like chewy? Kind of like gluten free pumpkin muffins meets protein bar. It’s hard to describe but I know you are going to like it anyway.

Pinky swear. 

It makes them feel perfect for breakfast but also perfect for snack because you and I both know that we want to pumpkin spice ALL THE THINGS. Nothing is safe. Even made pumpkin flavored homemade microwave popcorn once. But, I digress.

A protein bar really has it all. What I’m looking for in a protein bar is nutrients to keep my body healthy, the protein to keep my body strong and full of energy, and, of course, the FLAVOR! They’re loaded with all the pumpkin spice flavor you want, plus they’re sweetened naturally, and contain loads of protein to get you through your busiest of days! YES PLEASE!

What kind of protein powder works best?

This pumpkin protein bars recipe is super versatile because you don’t have to use a specific type of protein powder! I’ve used both whey protein powder as well as plant based and they both work great in this recipe and result in delicious taste and texture!

Pumpkin Protein Bars Ingredients 

I love a recipe with good, clean ingredients, that actually tastes GOOD! Anyone with me on this? This tasty pumpkin protein recipe definitely meets the mark, and here’s what you’ll need to make these tasty bars:

  • Pumpkin Puree (not pumpkin pie filling)
  • Egg Whites
  • Maple Syrup
  • Pure Vanilla Extract
  • Vanilla Protein Powder
  • Truvia
  • Pumpkin Pie Spice
  • Quick Oats
  • Pecans

How to make Pumpkin Protein Bars

Nothing’s better, in my opinion, than something that’s so delicious but also isn’t too fussy to make! That’s another reason why these bars are my JAM. They only take a few simple steps to make a reality and they’re going to be your new GO TO snack! Here’s how to make them:

Prepare

Set your oven to 350 degrees Fahrenheit and let it heat up. Line the pan with some parchment paper, spray it with a bit of oil and set aside. 

Stir

In a large bowl, stir together the pumpkin, egg whites, maple syrup, and vanilla extract. In a medium bowl, stir together the truvia, protein powder, and pumpkin pie spice. Add in the quick oats and add the wet ingredients to the dry. Mix it all together until well combined.

Bake

Using a rubber spatula, spread the batter into the prepared pan. Sprinkle with pecans and drizzle with syrup. Pop it in the oven and bake until the middle feels set. 

DEVOUR

Cool completely, then slice and serve! Enjoy!

What’s the best way to store Pumpkin Protein Bars

Bake up a batch or two and enjoy these tasty bars later! I recommend storing them in an airtight container in your fridge. They will last about a week this way. If you still have some left after a week (I doubt you will because they’re THE BOMB but anyhow…), simply pop the airtight container in the freezer and keep them in there for up to a month! Delicious, simple, nutritious bars ready to enjoy when you want them!

Ingredients

  • 1 1/2 cups Pumpkin Not pumpkin pie filling
  • 3/4 cup Egg Whites About 6 egg whites
  • 3 tablespoons Pure Maple Syrup Plus more for drizzling
  • 1 teaspoon Pure Vanilla Extract
  • 1/4 cup Vanilla Protein Powder
  • 1/2 cup Truvia
  • 1 tablespoon Pumpkin Pie Spice Plus 2 teaspoons
  • 1 cup Quick Oats
  • 1/3 cup Pecans Chopped

Instructions

  • Preheat your oven to 350°F and line an 8×8 pan with parchment paper, spraying with cooking spray.
  • In a large bowl, stir together the pumpkin, egg whites, maple syrup and vanilla extract
  • In a medium bowl, stir together the protein powder, truvia, and pumpkin pie spice.
  • Add the protein powder into the mixture, along with the quick oats and stir until well combined.
  • Pour the batter into the prepared pan and smooth out evenly. Sprinkle with chopped pecans and drizzle with maple syrup.
  • Bake until the center feels set and pulls away from the side, about 35-40 minutes.
  • Let cool completely at room temperature and slice into bars and serve!

Tips & Notes:

Bars can be stored at room temperature for 2-3 days and then refrigerated.

    Is it possible to use xylitol instead of truvia? I cannot tolerate stevia.
