It’s no secret that avocado has been the star ingredient of the last ten years. And with its popularity, there’s definitely been no shortage of ways to use this powerhouse ingredient. Now, a new contender has entered the realm of creative ways to use an avocado: Avocado Deviled Eggs.

A long-time staple of hors d’oeuvres plates and tea parties, nothing says classic quite like deviled eggs. But if your grandma’s recipe was feeling a little too boring, it’s about to get revived with a modern twist. Hint: there’s way less mayo, and much more delicious avocado flavor.

If you’ve got a special occasion coming up, these Avocado Deviled Eggs are sure to impress your friends and family. They take the refined taste of traditional deviled eggs and kick it up a notch with jalapeno, cilantro, lime, everything bagel seasoning, and of course, avocado. They’re a guaranteed crowd pleaser with a taste that resembles guacamole, yet it is made unique in a perfectly bite-sized format.

Are Avocado Deviled Eggs Healthy?

Avocado Deviled Eggs make for a healthy snack or appetizer when you consider that they’re full of protein from the eggs, and include healthy fats from the avocado. Since you’re using less mayo than in traditional deviled eggs, they’re even more of a healthier alternative. They are also suitable for a range of diets, including gluten-free, paleo, and keto.

INGREDIENTS

  • 6 large eggs
  • 1/2 jalapeno or 2 tbsp, diced.
  • 1 avocado halved pitted, and peeled
  • 1 tbsp freshly squeezed lime juice
  • 1/4 cup mayonnaise
  • 2 tbsp fresh chopped cilantro divided
  • 2 tbsp everything bagel seasoning
  • Salt and black pepper to taste.

INSTRUCTIONS

Boil

Fill a small sauce pot with water enough to submerge 6 eggs and bring to a boil. Place your eggs in the water using a spoon and boil for 10-12 minutes until yolks are hard. Once ready, remove from the saucepot and carefully place in an ice bath.

Cut

Peel your boiled eggs and cut them in half lengthwise. Place the whites on a serving plate remove the yolks with a spoon and place them in a large bowl.

Mix

In the large bowl with egg yolks, add mayonnaise, diced jalapeno, avocado, half the cilantro, lime juice, and salt and pepper. With a fork, mix until well combined. Alternatively, add all ingredients to a food processor and process until blended.

Garnish

Begin spooning your deviled egg mixture into the eggs. Garnish with everything bagel seasoning, and remaining cilantro, and serve.

Tips and Tricks to Make Perfect Avocado Deviled Eggs Recipe

  • If you really want to impress your guests, try putting the filling into a piping bag fitted with a nozzle and piping the mixture into the egg whites instead. (Or use a Ziploc bag with the corner cut out.)
  • If you plan on making Avocado Deviled Eggs in advance before serving, keep the egg whites and filling separate right up until you’re ready to plate and serve.
  • Chill your finished creations for 20-25 minutes before serving, as these Avocado Deviled Eggs are best served cold.
  • The jalapeno peppers will add some spiciness, but if you want your Avocado Deviled Eggs to have even more of a kick, add a pinch of cayenne pepper.

Are Avocado Deviled Eggs difficult to make?

They may look fancy, but deviled eggs are actually quite easy to make as long as you properly boil your eggs and work with a delicate hand when slicing the hard-boiled eggs. After boiling, make sure to allow enough time for the eggs to cool in the ice bath before peeling off the shell.

Does it matter what size eggs I buy?

It’s best to use large eggs to make Avocado Deviled Eggs so that you have more surface area to work with. This recipe calls for large eggs, and the other filling quantities reflect that, so if you use small eggs, for example, the taste might vary slightly.

I don’t like cilantro – can I make Avocado Deviled Eggs without it?

If you’re not a fan of cilantro, consider swapping it for another herb like dill or parsley.

Can I make my filling without mayonnaise?

This recipe was conceived using as little mayonnaise as possible while still maintaining that classic, creamy deviled eggs texture. If you really want to omit the mayonnaise though, trying using a little bit of sour cream in its place.

Make Ahead and Storage

These Avocado Deviled Eggs will store in the fridge for up to 2 days, but it’s best to eat them as soon as possible after making them. With time, the avocado will start to oxidize and your beautiful filling will start to brown. The lime juice in the recipe will help to prevent this a bit, but if you are planning to store them in the fridge, be sure to use your most air-tight container. I don’t recommend freezing your eggs, unless you like rubbery eggs.
