Grilled Chicken with Sour Cream and Onion Marinade

Before we even get into this, you see those green onion up there in that purdy picture? Those are from my brand new garden guys! Read: My neighbour’s garden, but she is away on vacation so I can call it mine for this week. Ssssh. One day I will learn how to grow my own.

Anyways.

It’s been like mega hot here, which is super unusual for rainy Washington. And, when I see sun, I get the urge to grill everything in sight. The barn cat saw me eyein’ it up the other day and ran away. I’m surprised my new pet chickens actually come near me to be honest. Everything on the grill, or BBQ for my Canadian friends (yes, I am slowly assimilating. And that is a very big word), tastes better does it not? Take something nasty, like brussel sprouts, and grill them. Poof! Instant yum! Secret: I actually kinda sorta like brussel sprouts, but I get judged when I tell people that. Same thing goes for Justin Beiber.

Moving on.

I’m also in this put-creamy-sauce-on-everything-but-try-to-make-it-healthy phase of my life. You know that phase? If not, now you will. So, I was walking by my neighbours garden the other day and just saw these fresh green onions screaming out at me “turn me into something!” So, I had to listen to them, ’cause if an onion is talking,well, you best listen.

Now, I ask you, who doesn’t like chips? I don’t particularly eat them, but that does not mean I don’t like them. If you say you don’t like them, well….you’re lying. I particularly like sour cream and onion chips. They have a cool, creamy flavour that is perfect for a Summer day. I don’t want no sweet chili heat Doritos when I am already half melted from the sun you know?

I decided those green onion wanted to become one with sour cream.

This dipping sauce turned out even better than I had hoped for guys! It had a richness from the buttermilk that I didn’t think I would achieve using the low fat sour cream. It’s so thick that it wraps this chicken breast recipe in a creamy, onion-y, yummy, hug. Not to mention,it has that cool and refreshing flavour that perfectly balances out the charred, smokiness of the grilled chicken.

Did I mention it takes like .05 seconds to make? Maybe a bit longer, but it makes the perfect Summer weeknight meal! We all know how I feel about quick and easy. I like it. Like a lot. But, not as much as I like you guys. Awwwwww.

I know you’ve had a long day, so change your dinner plans, and make this speedy meal. The creamy, onion-y hug will make it all better. I pinky swear.

Recipe

Grilled Sour Cream And Onion Chicken

Ingredients

  • 2 Chicken Breasts
  • salt
  • pepper
  • Sour Cream and Onion Dip:
  • 1/4 Cup Light sour cream not fat free!
  • 2.5 Tbsp Light buttermilk
  • 2 Tbsp Diced green onion
  • 1 tsp Dill flakes
  • 1 tsp Onion flakes
  • 1/4 tsp Garlic powder
  • Salt and pepper to taste

Instructions

  • Preheat your grill to High.
  • While your grill preheats, salt and pepper your chicken breasts and dice the green onion.
  • Once the grill is hot, Grill the chicken for around 10-12 minutes (only flip once during this time!)
  • While the chicken is cookin' away, throw all the ingredients for the dipping sauce in a food processor.
  • Blend on High until everything is combined.
  • Serve on the side of the grilled chicken, or you can even spread it on top!
  • Devour!

Tips & Notes:

This also works really well if you put the chicken in a baking dish and pour the sauce over top. Then, stick it in a 350 degree oven for about 20-25 minutes. Just as delish!
