Not to mention a 1-2 punch of protein and fiber to keep you from having to snack on a billion paleo protein bars until lunch.

Why Oatmeal is the BEST Breakfast

Oats are my absolute FAVORITE breakfast, and if you don’t agree, you might just change your mind after you try THIS overnight coffee oats recipe. In my opinion, oats are the best way to start the day because they contain protein, give you energy, keep you full, AND taste great. On top of all that, overnight oats are so easy to make- whip up some carrot cake overnight oats or some chocolate peanut butter overnight oats before bed and the fridge does the work while you rest! These coffee oats are a beautiful and tasty combination of oats and coffee and you are going to LOVE them! 

How to make Coffee Overnight Oats

Making oatmeal on the stovetop is pretty easy in itself, but when you make overnight oats it happens to be even EASIER! There is only 3 simple steps required to make this recipe a reality, so here’s how you can make it at home:

Mix

Place all the ingredients in a bowl and stir to combine. 

Chill

Cover with plastic wrap and place the bowl in the fridge for at least 6 hours, but preferably overnight. 

DEVOUR

Take the bowl out the next morning, serve and enjoy!

Coffee Protein Overnight Oats Recipe Variations

There are endless ways to mix things up with this recipe to make it your own! Here are a few ways that will make your oats extra delicious:

Make it Mocha: If you want to make these overnight oats taste like a mocha, you could also add in a bit of cocoa powder to the mix! 

Make it Like a Latte: To get vanilla latte vibes, I suggest throwing in a bit of vanilla protein powder when mixing up your overnight oats. 

Add some Extras: Feel free to mix things up and dress up your oats however you’d like! Add a dash of cinnamon if that’s your thing, or stir in some delicious nut butter to make it THAT much more delicious!

How long do Overnight Oats last?

Another fantastic fact about overnight oats is that they last longer than just one day! These coffee overnight oats will last up to 5 days, so if you make them on a Sunday night, you will have breakfast covered for the work week!

How long do Overnight Oats take?

These oats only take a few minutes to make, and then the fridge does the rest of the work for you! They will need to sit in the fridge for at least 6 hours, but I recommend leaving them overnight for the best flavor and texture! 

Are Oats good for you?

YES! Oats are most definitely good for you and are a fabulous food to incorporate into your daily diet. Oats are known to lower blood sugar levels, contain a high amount of antioxidants, and help you to feel full for longer! They also can help maintain a healthy gut bacteria and can ease constipation as well, keeping things moving in the digestive system.

Ingredients

  • 1/2 Cup Rolled, old fashioned oat (GF if needed)
  • 1/2 Cup Strong brewed coffee
  • 1/3 Cup Non-fat vanilla Greek yogurt (Plant based for vegan)
  • 1/2 tsp Vanilla extract
  • Sweetener of choice, to taste (I used stevia)

Instructions

  • Mix all ingredients in a medium bowl, sweetening to taste.
  • Let sit in the refrigerater for at least 6 hours – overnight.
  • DEVOUR the next morning!

    Have quick oaks in the cupboard that I’d like to use is is there a way to substitute quick oats for regular oatmeal? I’d really like to use what I have on hand prior to buying a new box.

      Hi Debby, yes usually quick oats and regular oatmeal are interchangeable. The only issue may be the texture as quick oats tend to be cut in smaller pieces.
