This Cottage Cheese Sandwich is a healthy and protein packed lunch for kids or adults! It will keep you full until dinner and is so easy to make!

Why yes I did make a sandwich out of cottage cheese.

We’ve gotten pretty creative around these parts with things like fluffy cottage cheese pancakes and healthy cottage cheese cheesecake. I have even shared my favorite high protein snack that I’ve been eating for nearly a decade.

But we’ve never just kept cottage cheese in it’s natural form without doing weird things to it…until today.

Have you ever even considered making it into a sandwich or do you only think about making “normal” sandwiches like a chicken pesto sandwich? Honestly, I didn’t know if this would be weird but HOLY MOLY it is NOT.

It’s salty and creamy and then there is this freshness from tomato and cucumber and a little 1-2 punch of heart healthy avocado, all sandwiched (see what I did there) between 2 slices of fluffy bread and I am HERE FOR IT.

Why a Cottage Cheese Sandwich is the PERFECT Sandwich

Cottage cheese is really the star of this sandwich I’m going to show you today, and for good reason! It is packed with protein and healthy fat, and I use it in SO many recipes, like Chocolate Peanut Butter Cheesecake and Healthy Almond Joy Cheesecake. As for today’s recipe, you have to know that I’m a sandwich LOVAH. I’m also a lover of any meal that is a one-and-done type of situation, meaning it has all the nutrition I need to keep me full and give me energy without being too complicated! THIS sandwich I’m going to show you today is the perfect lunch because it brings that perfect balance to keep  your body healthy, energized and FULL. It has:

  1. Cottage Cheese: Protein Packed to give you strength and keep you full!
  2. Bread: Carbs to give you the energy you need to tackle a busy day.
  3. Avocado: Healthy fats to keep your body running well.
  4. Veggies: Vitamins and Nutrients GALORE!

Which bread is best for this Healthy Sandwich?

When I’m making up a batch of these sandwiches using cottage cheese, my favorite kind of bread to use is a super thicky, seedy whole grain loaf. You don’t have to use the same kind, though- feel free to use your favorite kind of bread as any will do! Rye, sourdough and whole wheat are also great options. You can even use gluten free bread if needed!

Cottage Cheese Sandwich Ingredients

The ingredients list for this healthy cottage cheese recipe, like many of my recipes, is simple! It includes healthy, fresh from the garden ingredients as well as healthy fats and protein to round it off! Here’s what you’ll need:

  • Whole Grain or Gluten Free Bread
  • Butter or whole30 mayo
  • Avocado, mashed
  • Roma tomato, sliced
  • Cucumber, sliced
  • Full-fat cottage cheese
  • Salt and Pepper

How to Mix it Up

This sandwich is so simple yet DELISH, but feel free to switch things up to keep it interesting or more suited to your taste! You can mix it up in the veggie department or add some sauce or spreads for flavor! Here are a few ways to jazz it up a little:

  • Veggies: I love crunchy veggies on my sandwiches. Feel free to use other veggies on this one, like sliced red, orange, yellow, or green bell peppers or some romaine or butter lettuce! 
  • Sauces: Feel free to add some mayo or mustard! 

How to Make Cottage Cheese Sandwich Recipe

Spread

Lay out your slices of bread on a cutting board or plate. Spread the butter onto the bread. Next, spread the mashed avocado onto the bread, or lay the slices overtop of the butter.

Add the Veggies

Lay the tomato and cucumber slices overtop of the avocado and a pinch of salt and pepper. 

Add the Cheese

Finally, spread the cottage cheese over top of the veggies. Finish it off with another pinch of salt and pepper and close it up with the other slice of bread. 

Serve

DEVOUR your delicious sandwich!

Ingredients

  • 2 Slices whole grain or gluten free bread
  • 1 Tbsp Butter
  • 1/4 Avocado, mashed or sliced (30g)
  • 1/2 Roma tomato, sliced
  • 1/4 Cup Cucumber, sliced
  • 1/3 Cup Full-fat Cottage Cheese (80g)
  • Salt and pepper

Instructions

  • Spread the butter on the bread. Then spread on the mashed avocado, or lay the slices on.
  • Lay the tomato and cucumber slices on followed by a pinch of salt and pepper.
  • Add the cottage cheese with another pinch of salt and pepper.
  • DEVOUR
