You’re obsessed in 3…2…1…

10 MINUTE COOKIE DOUGH. For BREAKFAST. With ALL. THE. PROTEIN.

Told ya so.

If you’re one of those humans who’s morning routine looks something like:  pressing “snooze” as many times as possible –> realizing you need to get up because ADULTING (why?!) –> angrily rolling out of bed and IMMEDIATELY bee-lining to the fridge because FOOD, then I suspect you’re also looking for a  breakfast that is:

  1. Quick, no-fuss food
  2. EASY like “doesn’t require morning-you to rub brain cells together”
  3. You know what they say: the most important meal of the DAY
  4. Tastes like dessert.

That last one may not have been on your usual morning-must-have list, unless you’re a regular eat of funfetti protein overnight oats or cinnamon roll protein oatmeal but, now that I’ve mentioned it, IT IS RIGHT?

Knew it.

Well, my hangry-morning-food-loving friend, this unassumingly little bowl of creamy-dreamy and perfectly sweet oatmeal, with it swirls of ooey-gooey melty chocolate and cookie dough vibes is about to ROCK YOUR BREAKFAST WORLD.

In the sense that waking up to adult actually doesn’t even feel like such a BURDEN. RLY RLY.

Oatmeal is my breakfast addiction because it’s wholesome, real-food nutrition that is stupid-easy to make, tastes DELISH, and actually FILLS you up until lunch time.

It’s A-L-S-O very easy to add protein to (hello oatmeal breakfast bars and cookie dough overnight oats) which allows you to create the ULTIMATELY balanced meal in O-N-E bowl. Remember, I shared my tips in the how do you make protein porridge post!

Oatmeal? You KILLIN’ IT.

The first trick to make your protein oatmeal recipe taste like a baked-with-love-fresh-from-the-oven warm cookie is to nix the water and cook it in vanilla almond milk. This swirls in creamy notes of luscious vanilla in EVERY. SINGLE. BITE exactly like the most perfect cookie should have.

Secret numero dos is butter extract. If you remember the vegan cake batter cashew butter, I explained to you that this is my SECRET weapon to create that rich, buttery flavor in food but WITHOUT actual butter and added fats or calories.

Do NOT omit it or your taste buds will be sad at the promise of cookie dough that IS NOT FUFILLED. KEY ingredient internet friends.

The third, and final, secret ingredient is for those of you who have wondered how to increase protein intake: vanilla protein powder. A scoop of this light and fluffy, muscle-building goodness ALSO makes this breakfast a mega PROTEIN PUNCH for your morning.

They key with adding protein to your oatmeal is to stir it in at the VERY END of cooking. Heat makes protein powder go an unpleasant texture so, if you add it in while the oatmeal just beings to cook, you will have nasty-icky-textured oats that do not resemble cooking dough in ANY WAY EVER.

Stir it in juuuuuust at the end my friend.

Of course, chocolate chips are self-explanatory. You’re SO gonna love how they melt into the warm oatmeal as your dig your spoon into each fluffy-soft bite and swirl it allll together inside your mouth.

Cookie dough addiction level SO HIGH RIGHT NOW.

Ingredients

  • 1 cup unsweetened vanilla almond milk
  • 1/2 cup old fashioned rolled oats gluten free if needed
  • pinch of salt
  • 5 tablespoons vanilla whey protein powder
  • 1 1/2 teaspoons monkfruit sweetener or sweetener of choice, to taste
  • 1 teaspoon organic butter extract
  • 1 tablespoon mini chocolate chips

Instructions

  • Combine the almond milk, oatmeal and a pinch salt in a medium pot and bring to a boil on high heat.
  • Once boiling, reduce the heat the medium and simmer, stirring frequently, until the oats are thick and tender, but still a little runny, about 3 minutes.
  • Once cooked, remove from the heat and stir in the protein powder, sweetener and extract.
  • Transfer to a bowl and stir in the chocolate chips.
  • DEVOUR!
