On the other hand, I know it’s a daunting task to do any serious cooking when you’ve just gotten out of bed. Maybe a few early birds don’t mind a challenge in the morning, but for many of us, just avoiding the snooze button is a significant accomplishment. 

So, how can you add some extra pizzazz to your morning toast while still being realistic? Avocado toast is the obvious answer for millennials, but don’t forget about the humble egg. For a rich and protein-packed topping, you only need to crack a few eggs, scramble them up, and top your favorite slice of toast. So simple and satisfying! 

So, get ready to “whisk” away your morning malaise with this “egg-cellent” egg toast recipe! 

Is Egg Toast Healthy?

The title “superfood” gets thrown around a lot nowadays, but I think eggs are worthy of this high status. Not only do eggs contain all the essential amino acids your body needs, but they also contain many antioxidants, vitamins, and minerals. Putting your scrambled eggs on top of high-quality whole-grain bread also adds a great source of fiber to keep you full and help your digestion. 

Although eating a slice of this simple egg toast recipe is already pretty healthy, there are easy ways to enhance the nutrition if you want. For example, if you’re not a fan of the fat content in whole milk and butter, you could swap out these ingredients with skim milk and avocado oil. You could also eliminate lactose with dairy-free milk like almond, oat, or coconut. To increase the vitamin content in this recipe, consider adding veggies like fresh spinach, chopped onions, or diced bell peppers into your scrambled egg mix. 

How do you keep scrambled eggs from getting rubbery?

There are many tips and tricks to cooking fluffy scrambled eggs, but one critical rule is to start with a cool-ish pan. This is one recipe where you don’t want to hear a sear because that means there’s a huge risk of uneven cooking, browning, and an imbalanced texture. Ironically, a heat-resistant rubber spatula works great to fold your scrambled eggs gently, but you could also use a wooden spoon. When you notice your scrambled eggs are nearing completion, turn off the stovetop and let the residual heat complete the work. 

Final tip: Some chefs recommend starting with eggs straight out of the fridge rather than letting them sit on your counter before cooking. According to this tip, colder eggs tend to hold their shape better than eggs at or near room temp, making it easier to beat them into a consistent mixture.

Put the slices of toast you want in a Ziploc bag on the counter, place a pan on the stovetop, and have a bowl, spatula, and whisk ready to beat those eggs. If you’re using vegetables like onions or bell peppers, you could also cut and store them in airtight containers in the fridge overnight. 

What’s the best pan to cook scrambled eggs? 

There’s no “perfect pan” for preparing scrambled eggs, but non-stick pans are probably the most popular choice today. Since these pans have a non-stick surface, they provide an additional buffer to keep your eggs from sticking, which makes it super easy to slide your eggs off and clean your pan afterwards. 

However, stainless steel is another hot option if you don’t have a non-stick pan. Although these pans won’t have the extra layer of non-stick coating, they are super durable and can still support a fluffy batch of eggs — provided you use techniques like a medium-low temperature and plenty of butter or oil.

Is there a vegan-friendly way to make egg toast?

Even though vegans can’t have eggs, there are creative ways to make this recipe for a similar flavor experience. For instance, vegans can crumble or mash firm tofu and pan-fry it with their favorite veggies and alternative milk for a super “scrambled tofu toast.”

Egg toast isn’t just a simple way to make a healthful breakfast, it’s so easy to mix and match with other popular sides and meals in the morning. If you want, you could easily slice a few avocados or make a bowl of Guacamole to top your egg toast with extra healthy fats. To add savory notes, you could also garnish your egg toast with some Broiled or Baked Bacon (YUM!). 

If you want something more substantial, it isn’t too much of a stretch to make an iconic plate of steak and eggs. After all, you already have the eggs, so all you need to do is add a pan and cook your steak. Include some Delicious Hash Browns as a side, and you have the makings of a satisfying weekend breakfast.
