Ingredients
- 3 Tbsp Oat flour (20g) Gluten free if needed
- 3 Tbsp Non-GMO Cornstarch (24g)
- 1 tsp Baking powder
- Pinch of salt
- 1/4 Cup Two Good Blueberry Greek Lowfat Yogurt + Rest of the container for topping
- 1 Large egg
- 1/2 Tbsp Fresh lemon juice
- 1 tsp Honey + additional for topping
- 1/2 tsp Lemon zest, packed (about 1 lemon)
- Fresh blueberries, for topping
- Bee pollen, for topping (optional)
Instructions
- Whisk together the flour, cornstarch, baking powder and salt in a small bowl.
- In a medium bowl, whisk together the yogurt, egg, lemon juice, honey and lemon zest. Add in the dry ingredients and whisk until combined.
- Heat your waffle iron up to the highest setting. Spray with cooking spray and pour half the batter into the iron (about a heaping 1/2 cup) cook until the waffle iron stops steaming. If you want your waffles EXTRA crispy, you can cook them for 2 cycles of the waffle iron.
- Top with the rest of the yogurt, blueberries, bee pollen (optional) and a drizzle of honey.
- DEVOUR!
