When you think of the most comforting foods you’ve enjoyed throughout your life, surely grilled cheese ranks near the top. The best things in life really are simple. What makes this sandwich superb is the creamy healthiness of the avocado combined with a tasty cheese, and good-quality bread.

Bread is so basic to our concept of health and wellness. It’s always worth it to get or make the bread you love. I’ve been loving sourdough bread for a couple of years now. I make it with organic flour, and sometimes mix several flours such as rye, white, and whole wheat, along with a little rice flour for the top. Adding some aromatic spices makes it a delight, too. That’s what I’d use for this sandwich. But buy or try some different quality breads, according to your preference.

You’re going to love how incredibly fast this recipe is for a delicious warm sandwich. Preparing it as the recipe directs will result in a healthy, satisfying treat. Customizing it according to your mood, and what’s on hand, will elevate it to sublime. Adding mushrooms and onions adds to the nutritional profile and increases the yum factor as well!

Is Avocado Grilled Cheese Sandwich Healthy?

This sandwich gives you healthy fats from the avocado and calcium and protein from the cheese, while the bread delivers fiber and a number of different minerals depending on its ingredients. Try sprouted grains, whole grains, enriched, and sourdough. Breads are so variable, you really need to read the labels on them, and even the cheese.

It makes sense to eat the wholesome types of breads and develop a taste for them. Smoked Gouda or vegan smoked Gouda is a good cheese to use, keeping it mellow yet adding a bit of unexpected flavor.

Variations for avocado grilled cheese…

This sandwich is just begging for options. If I fancied something a bit different, I’d likely make a sourdough loaf with some rye in it for the bread, and add caraway and fennel to the top before baking. I’d mix some vegan cream cheese with a bit of tangy mustard and spread it on the inside of the bread. I’d mix a bit of butter and mayonnaise for the outside of the bread, to give it an even better taste and crunch.

I’d also add some vegan feta, sautéed mushrooms and onions—and then roasted red peppers, roasted garlic, and some sautéed greens. And you’re right, at this point, you may not be able to squeeze it all together, so it’d be an open-faced sandwich, finished under the broiler. Heaven. Grab the fork and knife!

Disclaimer: these are far from your only options. Think tomatoes. Black olives. Jalapeños. Hummus. Kimchi. You get the picture. Or keep it as is! Still lovely.

  • 1 medium avocado, ripe
  • 4 slices bread
  • 2-3 slices Monterey Jack cheese
  • 2-3 slices cheddar cheese
  • 2 tablespoons butter, softened
  • Salt, to taste
  • Black pepper, to taste

Slice avocado, and butter bread.

Assemble

Layer cheese and avocado on bread.

How to Make Ahead and Store

These are better made to order and eaten fresh. If you do try to reheat it, you may need to deconstruct it, and use a fresh avocado to replace the one that likely turned brown in the fridge. Heat the veggies and cheese, and then re-toast the bread under the broiler, for crispiness.

How to quickly ripen a hard avocado

Place it into a small paper bag, along with a ripe banana, apple, or kiwi, and close the end. It should be ripe by tomorrow! Need it much sooner? Set your oven to 200° F and wrap the avocado in foil. Bake until soft, which may take anywhere from 10 minutes to up to an hour.

How to choose a good avocado

Choose an avocado that is firm yet gives when pressed gently. Also, check the stem end. Bright green isn’t close to ready yet. Dark brown is likely over-ripe. Look for medium brown along with no obvious bruising or shrinking of the skin.

Ingredients

  • 1 medium avocado ripe
  • 4 slices bread
  • 2-3 slices Monterey Jack cheese
  • 2-3 slices cheddar cheese
  • 2 tablespoons butter softened
  • Salt to taste
  • Black pepper to taste

Instructions

  • Halve the avocado, remove the pit, and slice it thinly.

  • Butter one side of each bread slice. Place two slices, butter-side down, in a cold pan.

  • Layer Monterey Jack cheese, avocado slices, salt, pepper, and cheddar cheese on the bread in the pan.
