Feta does make everything better, in my opinion. I’m especially impressed with the vegan feta options available now. A little bit of crumbly saltiness goes a long way toward adding that final touch that you didn’t even know you needed.

This recipe is like a new take on the old ‘egg in a hole’, where a circle is cut into a piece of toast and an egg fried in the middle, topped with a slice of cheese, with the cutout circle replaced, and finished under the broiler. This new take lends an adult air of refinement to that childhood favorite.

You’re going to love how quickly this comes together as a protein option for breakfast, brunch, lunch, or even supper. There are also many ways to customize it or add your signature touch.

Are Feta Fried Eggs Healthy?

The healthiness of many dishes is subjective, especially considering individual needs. Eggs provide vitamin D, which helps your body absorb calcium and contributes to a healthy immune system. Feta and eggs both provide protein, the all-important building block of life and eggs are a great source of choline too, which supports your memory and muscle control.

Feta cheese is a lower-fat option than many cheeses, but plant-based feta is an even healthier option. Typically made from coconut oil, ‘fake feta’ contains healthy fats. To ramp up the nutrition, serve this recipe as a southwestern-type dish with sliced or mashed avocado, tomato, and arugula. Other vegetables can be added as a base or a topping, or both! Try fried mushrooms, sautéed greens, or fried onions. Personally, I’d choose all three.

What’s the difference between different types of feta?

Feta is packed with protein but lower in fat than many cheeses, although it is a bit higher in salt. Authentic Greek feta is traditionally made from sheep’s milk or from a mixture of sheep’s milk and up to 30% goat’s milk. Greek feta is a Protected Designation of Origin (PDO) cheese, so it has to be manufactured in Greece to be a truly authentic feta. If feta is made in the U.S. though, it may well be made from cow’s milk instead. Vegan feta on the other hand is created primarily from coconut oil and potato starch, although tofu or cashews are other possibilities. It’s not difficult to make your own vegan feta cheese too if you feel up to it.

  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon olive oil
  • 1 slice whole grain bread, toasted
  • Salt and pepper to taste

Prepare

Heat skillet, add feta.

Cook

Crack egg into skillet, season.

Serve

Place on toast, enjoy.

How to Make Ahead and Store?

I’d recommend making this one or two servings at a time. Then there won’t be leftovers. This is an easy dish to prepare while conversing with your guests over a cup of coffee. It’s not really conducive to making ahead of time, and it’s so easy, there’s no need to. The freshness of the egg and the crispiness of the feta are what make this dish sublime.

Can I use other cheeses?

Other cheeses are likely to melt and run rather than turn crispy like feta. Goat’s cheese is similar to feta, so it will work.

What’s another seasoning to use?

This is completely a matter of preference. Feta is salty, so go very lightly if you have a salt-based seasoning. Herbal seasonings will add flavor and depth. Try chopped basil or pesto, bay seasoning, cumin, turmeric, sage, or thyme. Lemon thyme is a nice light touch,

You can’t go wrong with a green salad served with eggs. This can be a very simple combination, and the possibilities are endless. Since you have crispy, salty feta and softly fried egg on toast, try a crunchy option such as Pomegranate Persimmon Salad. Add in this Fruit Soup and you have a beautifully colorful and extremely nutritious meal that will satisfy you and your guests.

Ingredients

  • 1 large egg
  • 1/4 cup feta cheese crumbled
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon olive oil
  • 1 slice whole grain bread toasted
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a non-stick skillet over medium heat and add the crumbled feta cheese, forming a circle with an empty center for the egg.

  • Once the feta begins to sizzle and brown, gently crack the egg into the center of the feta circle, being careful not to break the yolk.

  • Sprinkle the egg with dried oregano, red pepper flakes, salt, and pepper. Cook to your desired doneness, allowing the feta to crisp up and form a golden crust.
  • Carefully slide the fried egg and feta onto the toasted bread and serve immediately.
